As you’d expect from a country wedged between Iran and Russia, Azerbaijan’s cuisine has absorbed all kinds of wonderful dishes and flavours from both Persian and Russian cuisines. Many have been adapted to local tastes over many years to give Azerbaijani food a personality all of its own.

One of the faves is Kutabi – delicious savoury pancakes stuffed with meat, cheese or veg, or even just with herbs. Plov is huge, too. Plov is an Azerbaijani Pilaf that uses saffron-flavoured rice with aromatic herbs, meats and vegetables.
