For those in the know, a Parmesan or a Parmo is a breadcrumbed chicken or pork covered in a special sauce, topped with cheese, then grilled or baked to perfection. The finished masterpiece is a bit like a schnitzel buried under melted cheese.
The original Parmo is said to have been invented by an American WW2 chef in 1958, when he was living in Middlesbrough. His tasty creation soon became a big fave around the region and is still going strong.
