One simple formula – pasta and sauce or soup – but an incredible range of options. There are over 300 varieties (known by four times as many names) and all kinds of wonderful long and short shapes and sizes. Long and thin, short and tubed, flat, twisted, shell-shaped, ring-shaped, spring-shaped, wheel-shaped, even bow-tie shaped. And there are many wonderfully rich sauces based around meat, fish, seafood or veggies, with equally wonderful names.

Ragù
Whatever type of Pasta you’re after, there’s one go-to sauce that will make you want to, er...just eat. Ragù is the most famous of Neapolitan meat sauces. Made from a Soffritto (the holy trinity of onion, celery and carrot), meat and tomato sauce with guest appearances from red wine, basil and olive oil, it’s a speciality of Naples. Penne Arrabbiata is a very spicy (and Vegan-friendly) sauce made from garlic, tomatoes and dried red chilli peppers cooked in olive oil. Tagliatelle al Fungi is another favourite with fresh mushrooms like button, chestnut and oyster with garlic, wine and thyme. Ravioli Ricotta e Spinaci (ricotta cheese and spinach) is very popular nowadays, but Ravioli can be traced all the way back to the Roman Empire. (You only need go back to your Just Eat app.)

Only the stylish Italians could turn something ‘flat’ into something deliciously desirable. One example is the iconic Pizza. Then second, is the classic Lasagne. It is prepared by stacking multiple layers of (flat) pasta between alternating Bolognese-Style, vegetable and cheesy sauce layers. Another excellent use of flat pasta is Ravioli – a wonderful way to get stuffed (in every sense). Ravioli has a filling of meat, seafood, cheese or vegetables sealed between two layers of thin square pasta dough, served with broth or sauce.
