Lamb Tagine
Couscous is another healthy staple of many recipes including the legendary Moroccan Lamb Tagine with Couscous. This is a succulent slow-cooked stew of melt-in-your-mouth lamb and aromatic spices such as turmeric, cumin, ginger, cardamom and cinnamon, is served with fluffy couscous and warm Flatbreads. Lamb, Beef and Chicken are traditionally cooked in this conical clay pot which allows steam to rise, condense and drip back down to create the tenderest of meats. And not just meats – the classic Moroccan Seven Vegetable Couscous typically includes carrots, turnips, squash, pumpkin, cabbage, aubergine, potatoes and courgette - with guest appearances from green beans, chickpeas and Moroccan Spices. Chicken Shawarma
Moroccan Chicken Shawarma is a delicious dish based on the Doner Kebab of Ottoman Turkey, that has become all the rage (a bit like the Just Eat app once you’ve tried it). Originally Lamb or Mutton, today's shawarma can be is typically chicken, but also Turkey, Beef, or Veal, cut into thin slices and stacked in a cone-like shape on a vertical rotisserie. Kefta Mkaouara (aka Moroccan Meatball and Egg Tagine) is another traditional dish of small beef or lamb meatballs simmered in a spicy tomato-based sauce, with boiled eggs added – importantly – in the last few minutes.
