Moroccan Cuisine is located at the crossroads of many civilisations, and is a mélange of Arab, Berber, Moorish, French, MIddle Eastern, Mediterranean, African, Iberian and Jewish influences. Makes you fancy a bit of everything, doesn’t it? Like Hummus (a dip of mashed chickpeas, perfect with warm pitta or fresh veg)? Or Kofta (meatballs of minced meat, spices and onions)? Or Falafel (deep-fried balls made from ground chickpeas and fava beans)? Or Kibbeh (a croquette-like shell filled with finely-ground beef or lamb, bulgur, minced onions and spices)? Or Dolma (a flavoursome family of stuffed veggie dishes including vine leaves, peppers, eggplant and zucchini (courgette)? To get it, you only need to know three words: Mezze! Chicken Shawarma
Moroccan Chicken Shawarma is a delicious dish based on the Doner Kebab of Ottoman Turkey, that has become all the rage (a bit like the Just Eat app once you’ve tried it). Originally Lamb or Mutton, today's shawarma can be is typically chicken, but also Turkey, Beef, or Veal, cut into thin slices and stacked in a cone-like shape on a vertical rotisserie. Kefta Mkaouara (aka Moroccan Meatball and Egg Tagine) is another traditional dish of small beef or lamb meatballs simmered in a spicy tomato-based sauce, with boiled eggs added – importantly – in the last few minutes. (The most important part, of course, is ordering it through the Just Eat app.)
