Eastern Mediterranean
Eastern Mediterranean cuisine is as varied as it is delicious. Fancy a bit of everything? Like Hummus (a dip of mashed chickpeas, perfect with warm pitta or fresh veg)? Or Kofta (meatballs of minced meat, spices and onions)? Or Falafel (deep-fried balls made from ground chickpeas and fava beans)? Or Kibbeh (a croquette-like shell filled with finely-ground beef or lamb, bulgur, minced onions and spices)? Or Dolma (a flavoursome family of stuffed veggie dishes including vine leaves, peppers, eggplant and zucchini (courgette)? Then you only need to know three words: Meze! Seafood Paella
The Greek Souvlaki is similar to the Turkish Shish Kebab and is small skewers of pork, barbecued, then served in plain pitta, or with salad. Lamb or chicken variants are usually served with rice, potatoes and yummy Tzatziki. This dip is found across the entire Southeast and Southwest Med, and consists of yoghurt mixed with cucumber, garlic and olive oil. The iconic Spanish dish of Paella, originated in Valencia around the mid-19th century. Now, Seafood Paella is the most recognised, and (typically) features the trio of monkfish, squid and mussels, with red peppers, short-grained rice, saffron, onion, garlic, paprika, rosemary and olive oil.
