Biryani, Dosa, Uttapam. Idli, Thali, Vada and Sambar – if you know your Indian food as much as you love it, you’ll know that South Indian Cuisine is quite different from North Indian Cuisine. In the tropical South, rice and lentils are more common than naan and roti.

Seafood and vegetarian-based meals are more typical than chicken and lamb. Sauces tend to be thinner and use coconut milk. And diners probably open their eyes wider and grab their drinks faster because the dishes are usually spicier. Southern Indian food is an irresistible mix of the cooking styles and tastes of its five Southern states – Andhra Pradesh, Telangana, Tamil Nadu, Kerala and Karnataka. Chicken Tikka Masala

Chicken Tikka is chicken breast marinated in yogurt, garlic and ginger, then cooked ‘dry’ in a Tandoori Oven. It’s evil twin is Chicken Tikka Masala (once Britain’s most popular dish) in which these roasted boneless chunks are cooked into a deliciously creamy, orange-coloured and not-too-spicy-honest-guvnor curry sauce so decadently rich that you will find your Naan bread irresistibly plunging into it again and again. Butter Chicken (aka Murg Makhani) is a similar North Indian mild-to-medium main dish but with a sauce based on ‘makkhan’ or butter, instead of a mixture of spices.

A Thali is a staple South Indian Dish that’s like lots of little meals in one. It’s traditionally served as a Buffet on a Banana Leaf (but we prefer a Just Eat delivery bike). The idea is that your palate gets a Salty, Sweet & Sour hit in one delicious sitting. A central dish of rice is surrounded by smaller dishes of Curries, Chutneys, Chapati Flatbreads & Papadums. What more could you ask for? (Oh, yeah...Indian Pickles.) Dosa are thin, mildly-spiced pancakes made from ground rice and Urad Dal (aka Black Lentils) – it’s a bit nutty and a bit crispy and a lot delicious when you hit the crushed potato and masala spice mixture inside. Try it with Sambar, the sour-savoury sauce made of Tur Dal (aka Tropical Green Peas), tamarind and lots of veggies. Or with various tasty Chutneys made from ingredients like popped mustard seeds, ground coconut, chilli, mint, coriander, tur dal (and don’t forget the Just Eat delivery bike).
