Originally Lamb or Mutton, today's shawarma can be is typically chicken, but also Turkey, Beef, or Veal, cut into thin slices and stacked in a cone-like shape on a vertical rotisserie. Kefta Mkaouara (aka Moroccan Meatball and Egg Tagine) is another traditional dish of small beef or lamb meatballs simmered in a spicy tomato-based sauce, with boiled eggs added – importantly – in the last few minutes.
