Margherita
Every Italian city has created a pizza to be proud of. Pizza Margherita is the famed Neapolitan icon made from San Marzano tomatoes (red), buffalo mozzarella (white) and fresh basil (green) to echo an edible Italian Flag. The quintessential Sicilian Pizza is the beloved Capricciosa, (aka the Grandma Pizza as it’s one of the oldest styles,) originally thick-crusted (but less so nowadays) with tomato sauce, mozzarella, ‘shrooms, anchovies, onions, ham, artichokes and olives. When in pizza mood, do as the Romans do, by ordering Pizza Romano with its typical thin-crust topped with tomato sauce, mozza’ and anchovies.
Proscietto e Fungi
Think you’re a fun gal (or a fun guy)? Then Proscietto e Fungi should appeal with tomato sauce, mozzarella, ham and lots of lovely mushrooms. Fold this in half and you’ve essentially got another Italian favourite, the Calzone – a type of ‘folded’ oven-baked pizza traditionally stuffed with ricotta, but also cheeses like mozzarella, Parmesan and provolone, with tomato sauce served on the side. A Stromboli is similar but with sauce baked in, and always rolled, like a burrito.
